Pineapple-Cashew-Quinoa Stir-Fry

One of my favorite go-to recipes in Veganomicon is the Pineapple-Cashew-Quinoa Stir-Fry, not only because of the impressive amounts of hyphens, but also because it is quick and delicious.

I generally modify this pretty liberally- I left out the mint and hot red chile, and just used a frozen veggie stir-fry mix. I also subbed pineapple juice for the vegetable broth. And you know what? It still tastes awesome. It's also great for when it's hot out because you can use a rice cooker for the quinoa and an electric skillet for everything else, so it doesn't generate too much heat.

This bad boy makes a ton, so it's perfect for a week of lunches or for a potluck. Plus, quinoa is a complete protein and looks a tiny bit like Saturn. And who doesn't love Saturn?
