I realize that the Easter-related posting flurry is over but everyone loves vegan quiche, right? Especially the recipe from the PPK? I know I do and although my family had celebrated Easter he day before (my basket contained an IOU for a suitcase, score!), I still wanted to be a little bit fancy on my own. Enter the classic broccoli vegan quiche, with a base of tofu and
cashews.
I love simplicity of it and how it looks lovely but tastes like comfort food. I'm thinking of mixing in some tempeh bacon in future incarnations of this recipe or perhaps some sun-dried tomatoes. In short, if you want something delicious, moderately fancy and surprisingly simple, turn to vegan quiche.
